The Adventure

This blog started as a way to share new recipes with friends and family from a challenge started in April. I was so tired of cooking the same things over and over again and wanted to get excited about cooking again. So, I grabbed several of my cookbooks and picked 25 new recipes to try in the month of April. It was fantastic! So fantastic in fact, that I've continued it since then. I try fewer new recipes evey other month though because I like to recook some of the other "new" recipes. I'm so happy to be excited about cooking again! I hope you enjoy the recipes below and I'm still looking for new ones next month if you have a good one you want to share!

3-Cheese Chicken & Noodles

Total Time: 30ish minutes prep, 6-10 hours cook
Servings: 6

3 cups chopped, cooked chicken
1.5 cups cottage cheese
1 can condensed cream of chicken soup
1 package (8 oz) wide egg noodles, cooked and drained
1 cup grated monterey jack cheese
1/2 cup diced celery
1/2 cup diced onion
1 cup diced green and/or red pepper
1/2 cup grated parmesan cheese
1/2 cup chicken broth
1 can (4oz) sliced mushrooms, drained
2 T. butter, melted
1/2 t. dried thyme

1. Put all ingredients into the Crock Pot. Mix well.

2. Cover; cook on low for 6-10 hours.


My notes: The strange thing about this one from most slow cooker meals is that I actually had to cook the chicken before I put it in the slow cooker. I'm guessing part of it is so the chicken gets coated with all the other good ingredients. Yes, I know the cottage cheese sounds strange, but it made it great!
