The Adventure

This blog started as a way to share new recipes with friends and family from a challenge started in April. I was so tired of cooking the same things over and over again and wanted to get excited about cooking again. So, I grabbed several of my cookbooks and picked 25 new recipes to try in the month of April. It was fantastic! So fantastic in fact, that I've continued it since then. I try fewer new recipes evey other month though because I like to recook some of the other "new" recipes. I'm so happy to be excited about cooking again! I hope you enjoy the recipes below and I'm still looking for new ones next month if you have a good one you want to share!

Slow Cook Tuscan Sausage and Bean Soup

Total Time: 20 minutes prep, 8-10 hours cook
Servings: 6

12 oz kielbasa (or sausage), cut into 1/4-inch thick rounds
2 cloves garlic, minced
1 onion, chopped
1 medium carrot, peeled and chopped
1 celery stalk, chopped
1/2 medium bunch kale, chopped (~4 cups)
3 cups chicken broth
1 can red kidney beans, rinsed and drained
1 can great Northern beans, rinsed and drained
1 can Italian seasoned diced tomatoes
1/2 cup red wine or water
1 t. dried basil

1. Put all ingredients into slow cooker.

2. Cover and cook on low for 8-10 hours.


My notes: Gotta love those instructions! I've never cooked with kale before today, so it's another new ingredient under my belt. Super easy and pretty good tasting. One really great side effect of this one is that it smells really good. When I walked in the house after work, it was a very plesant "surprise".
